    Vegan Apple Pie Smoothie

    This vegan apple smoothie is not only easy to make but it's so delicious. Feels like you're eating pie, but in a healthy whole food form!

    I love apple pie, apple cobbler, and apple crisp. Really apple cinnamon anything. Which means that I need those flavors in all forms and this apple smoothie hits the spot!

    Foods that feel like an indulgence but are actually healthy in disguise are the best. Much like my carrot cake smoothie, this smoothie drinks like a dessert but packs in plenty of healthy plant based ingredients. Blend it up, and watch smiles go around the room!

    Ingredients

    • Apple 
    • Dairy free milk 
    • Maple syrup 
    • Oats
    • Raw cashews 
    • Seasonings
    • Ice

    How to Make an Apple Smoothie

    You can simply blend up the raw apples with the other ingredients. But, for a more complex flavor here's what you'll want to do:

    1. Sauté the apples with some milk.Blue spatula mixing apples and cinnamon in a pot

    Serving suggestions

    Get fancy and add some extra toppings for a truly sweet treat like I did in my pumpkin pie smoothie! The following are our favorites:

    • Homemade vegan whipped cream
    • Ice cream
    • Caramel Sauce 

    Mix in suggestions

    Try adding in some extra flavor or nutrition with any of these foods:

    • Chia seeds
    • Flax seeds
    • Spinach
    • Nut butter
    • Vanilla protein powder

    Tips and tricks

    For the best apple smoothie, keep the following in mind:

    • You can either peel and core the apple or leave those parts on. They'll blend up nicely in a high speed blender.
    • A red apple will give you a classic sweet taste. Changing the apple variety will change the taste of the smoothie.
    • Any dairy-free milk will work, however full fat coconut milk will give the creamiest result.
    • If you want a rich flavor with a less creamy milk, you can add an extra ¼ cup of cashews.
    • If you are not using a high speed blender, you can grind the dry cashews into a fine powder using a coffee grinder. You can also soak them overnight or boiling them for 30 minutes.
    • To prep the night before, cook the apples then add everything but the oats and ice to an airtight container and refrigerate until ready to blend.

    Common Questions

    Can you put apples in a blender?

    You sure can! A high speed blender will work best. Cut it up into smaller chunks before blending.

    What apples are best for smoothies?

    Any apple will work, it depends on the taste you're going for. This recipe is best with a red apple. Sweeter varieties include fuji and honey crisp, while green apples will give you a more tart flavor.

    Are frozen apples good in smoothies?

    Yes they are! Using frozen fruit in smoothies allows you to skip the ice, giving you more nutrients while still being cold and delicious.

    Should you peel apples for smoothies?

    It is not necessary to peel the apples before adding to a smoothie, especially if you have a high speed blender.

    Vegan Apple Pie Smoothie

    This vegan apple smoothie is not only easy to make but it's so delicious. Feels like you're eating pie, but in a healthy whole food form!

    Equipment

    • Blender

    Ingredients
     
     

    • 1 apple , red variety (core and peel skin if preferred)
    • 1 cup dairy free milk , full fat canned coconut milk will give the creamiest result (see note)
    • ¼ cup extra milk to saute if making cooked version
    • ¼ - ½ cup maple syrup , add more for extra sweetness if preferred
    • ½ cup oats
    • ½ cup raw cashews , see note
    • 1 tablespoon cinnamon
    • 1 teaspoon vanilla extract
    • ⅛ teaspoon sea salt
    • 2 cups ice- about 26 cubes

    Optional toppings:

    • Homemade vegan whipped cream
    • Ice cream
    • Caramel Sauce (I use the one from this recipe)

    Instructions
     

    If making raw version-

    • Put everything but the ice into a blender. Blend until creamy.
    • Add the ice and blend until smooth.

    If making cooked version-

    • Saute apples with the extra ¼ cup milk until the liquid has evaporated and the apples have softened a bit, about 3-5 minutes. Take off heat and allow to cool. You can also saute with maple syrup, cinnamon, vanilla and salt. I found this version less sweet so you may prefer that.
    • Add to blender with the rest of the ingredients. Blend until creamy.
    • Add the ice and blend until smooth.
    • Serve with toppings of choice!

    Notes

    • The creamier the milk, the richer flavor this will have. If you want a rich flavor with a less creamy milk, you can add an extra ¼ cup of cashews.
    • If you are not using a high speed blender, you can grind the dry cashews into a fine powder using a coffee grinder. You can also soak them overnight or boiling them for 30 minutes.

      This is straight up apple pie in a cup. I'm in love! It's great for this time of year, you get a little taste of Fall but it's cold so still refreshing in the heat!
