Move over jalapeño popper, these vegan stuffed jalapeños are filled with plant based sausage and creamy white queso for a flavor bomb so incredible you will not believe they are vegan!

This is the treat of all treats for all my spice lovers. I’m not going to lie, these babies pack some heat, but that flavor though! It’s like a little fiesta in your mouth that you never want to end! Vegan jalapeño poppers are all the rage, so of course I came in and thought, how do we up that a little bit more? Chipotle flavored sausage of course. Because duh.
Vegan sausage without soy
Over here, we focus on a mostly whole foods based diet comprised in a large part of plants, which means that processed foods are not a common occurrence. As with many things in life, I don’t believe in absolutes, so indulging once in a while isn’t off the table. So wouldn’t it be even more amazing if our cravings were actually made of awesome ingredients?
Enter Field Roast. I first discovered these sausage beauties many years ago when perusing the aisle at my local market trying to find something for an upcoming barbecue. I needed easy, meaning throw it on the grill and stuff into my mouth without having to put it together myself. After product upon product made mostly of soy protein isolate, I almost gave up. Until I picked up one last option.
I found a list of ingredients that I actually knew. Some of which were actual vegetables- vegetables mixed with spices, seasonings and vital wheat gluten (so these are not gluten free). And the texture and flavor are amazing. I have many many non vegan friends that think these sausages are delicious!
The new vegan jalapeño popper
These vegan stuffed jalapeños take their popper counterparts up like 5 notches, not only in spice, but the flavor of the ingredients is unreal. Field Roast sausages come in 3 varieties: Italian, Smoked Apple Sage and Mexican Chipotle. They also have Frankfurters and Apple Maple Breakfast Sausage that we have used as well. For this recipe, I stuffed my jalapeños with the Mexican Chipotle flavor.
Where you have chipotle, you really should have some cheese. The obvious choice here was my super popular and loved Vegan Queso Blanco, which is a Mexican flavored white cheese sauce and basically bathe worthy. And all I needed to do for the flavor bomb I was looking for was combine the two main ingredients. It went a little something like this:
- chop sausage into small pieces
- make queso dip and mix with the sausage
- put mixture in jalapenos
- grill or bake
I am fancy like that, I also topped with a quick and easy mix of toasted breadcrumbs with lemon and smoky flavors. Make these and keep them for ALL the things.
Throwing a party that is so extra, people won’t leave
I’m not so sure that this is a good thing, but here we go. I have a party plan for these vegan stuffed sausages for that perfect summer fiesta. Outdoors, sunny warm weather, and food for all the peeps. Throw out the idea of vegan or non-vegan, because I’m pretty sure no one will know or ask or care once they are stuffing their faces.
- Vegan Queso Blanco (make this ahead of time and warm up day of, use what you need for the stuffed jalapeños and serve the rest as a dip with chips)
- These stuffed jalapeños
- Field Roast Sausages for the grill (serve in hot dog buns or without, don’t forget fixings)
- Simple ranch green salad (toss some sliced/chopped lettuce with this incredible Vegan Ranch Dressing)
- Grilled Pineapple Jalapeño Margaritas if you need a beverage!
There you go, party done. Not to mention the prep is minimal. Not good at planning and need your hand held? I’m here for you there too:
- The day before: Make the queso and the ranch. Keep in fridge until use.
- The morning of: Prep the vegan stuffed jalapeño. Don’t grill or bake but set aside, or in the fridge, until ready. Prepare the fixings for the grilled sausages. Make margaritas, store in fridge.
- Party time: Grill sausages. Grill or bake stuffed jalapeños. Toss salad. Have ice ready for margaritas. Devour it all!!

Vegan Stuffed Jalapeños
- 8 jalapenos
- 2 vegan sausages (I use Field Roast, Mexican Chipotle flavor)
- ½ cup Vegan Queso Blanco (see note)
- Smoky Lemon Breadcrumbs (see recipe below)
- Slice jalapenos in half length wise, to make 16 halves, and take out the seeds. If you are not placing them on a grill with a grate and baking (or grilling) on a flat surface, you may want to slice a small flat edge on the bottom so they don’t roll sideways. On the grill, they may not need this because they will fit in-between the rungs.
- Chop sausages into small pieces, place in a small bowl.
- Mix all breadcrumb ingredients in a bowl except the lemon juice, until combined. Add lemon juice and mix well to break up clumps.
- Put ½ cup queso blanco into the bowl with the chopped sausage. Mix well.
- Spoon about 1 to 1 ½ tablespoons sausage mixture into the cut jalapenos. Top with about 1 ½ teaspoons breadcrumbs.
- Grill or bake. If grilling make sure to spray oil on any surfaces that are not nonstick in case of sticking. If on a grill, they should be ready in about 8-10 minutes but check and remove when the jalapenos are browning. The sausage is precooked. If baking, place on a parchment lined cookie sheet and bake at 425 F (220 C) for about 10-15 minutes, but check at the 10 minute mark for brownness. You can also broil for the last minute to get the tops nice and crisp.
- Serve with more queso blanco drizzle on top! Be careful, they have a kick!

- Use gloves when cutting and deseeding the jalapenos to avoid the spice being on your hands and transferring to other things you touch.
- Use what you need form the queso blanco then serve the rest as a dip or keep for another time. It freezes well, simply defrost slowly on the countertop when needed, then reheat in the microwave or on the stove whisking well.
