Using a juicer, juice 2-4 lemons until you get ½ cup. How many really depends on how juicy they are, I used 2 but I have pretty juicy lemons from my tree.
Place the fresh pressed lemon juice, 1 cup strawberries, 2 tablespoons mint and maple syrup into a blender. Blend until pulverized into a thick puree.
Place puree into a pitcher, and add sparkling water and ice. Slice 4 extra strawberries and add to the pitcher. Pour into glasses/mason jars, garnish with mint and serve.
Notes
You can use frozen berries but they need to be thawed out before use.
Another sweetener can be subbed for the maple syrup. You can add more if you desire more sweetness.
If you’d like to make this an adult beverage, you can sub the sparkling water for a sparkling wine or champagne. A sparkling rose would go well.
