Instructions
Preheat oven to 350 F/ 175 C.
Put flours, baking soda, and salt in a bowl. Whisk well to remove clumps and combine.
In another bowl, add softened butter and sugars. Beat with a hand or stand mixer until fluffy.
Add apple sauce, vinegar and vanilla. Beat again until mixed.
Add in the flour mixture as you mix and continue to mix until it is combined well.
Fold in the chocolate chips.
Add spoonfuls onto a parchment lined cookie sheet.
Bake for 11-13 minutes, until golden. Oven temps vary so start watching at 11 minutes and take them out when they are just browning at the edges.
Cool so they don't fall apart and enjoy!
Notes
This recipe was tested with the ingredients above, any substitutions will change the texture and end result.
You will get 24 cookies if your cookie dough balls are about a tablespoon in size.
