Peas with Scallions and Dill

Ingredients

  • 2 pounds peas ,frozen
  • ½ cup dill ,chopped
  • 2 bunches scallions ,chopped
  • ½ cup  veggie broth  , low sodium if needed (plus more to sauté or drizzle of olive oil)
  • ½ teaspoon sea salt (plus more to taste if needed)

Instructions

  • Sauté chopped scallions with a drizzle of broth or oil and salt in a pot over medium heat until they begin to soften.
  • Add the peas and mix well.
  • Add the dill and broth. Mix well. Taste and add more salt if needed. 
  • Cover and bring to a simmer. Let it simmer for about ten minutes or until the peas are tender and desired consistency is reached.

Notes

You can use water instead of veggie broth, but the broth adds more flavor.
If you use broth you will need less salt, taste as you add.
The oil is totally optional and for flavor purposes only.
