Put everything but the ice into a blender. Blend until creamy.
Add the ice and blend until smooth.
If making cooked version-
Saute apples with the extra ¼ cup milk until the liquid has evaporated and the apples have softened a bit, about 3-5 minutes. Take off heat and allow to cool. You can also saute with maple syrup, cinnamon, vanilla and salt. I found this version less sweet so you may prefer that.
Add to blender with the rest of the ingredients. Blend until creamy.
Add the ice and blend until smooth.
Serve with toppings of choice!
Notes
The creamier the milk, the richer flavor this will have. If you want a rich flavor with a less creamy milk, you can add an extra ¼ cup of cashews.
If you are not using a high speed blender, you can grind the dry cashews into a fine powder using a coffee grinder. You can also soak them overnight or boiling them for 30 minutes.
