    Homemade Pina Colada Popsicles

    I love a good frozen treat in the warm summer weather. Especially when it's one of my favorite flavors, pina colada! These popsicles are easy to make and so tasty.

    Popsicle Basics

    Making popsicles is such a great way to get more fruits and veggies in. I even make them as a breakfast option, like these Blueberry Breakfast pops. The kids love them and I love I can add just about anything!

    These pina colada flavored popsicles are super easy to make. With a few basic ingredients, and a few basic tools, you're on your way to summer poolside treats.

    Ingredients

    These popsicles are basically my pina colada smoothie in frozen form. You only need a few basic things to get the creamy sweet flavor. Here is what I use:

    • Pineapple
    • Coconut milk
    • Lime juice
    • Almond extract (this is optional but gives you a hint of that maraschino cherry!)

    Tools needed

    The easiest way to make these is to use a popsicle mold. You can find a variety of options online. Here are a few:

    How to Make Pina Colada Popsicles

    You can make these with and without alcohol. Since alcohol doesn't freeze completely, know that if you do add it, your popsicles won't be as frozen solid. But they will definitely be tasty!

    3. Once frozen, carefully remove. Plain white popsicles laying on a white platter

    Tips and Tricks

    Here are a few tips so that your popsicles turn out perfect every time!

    1. You can use frozen pineapple but your mixture will be a little thicker and more like the smoothie version. Just be careful pouring into the molds.
    2. If you don't have mold, you can use paper cups. The peel the paper after it's frozen.
    3. The coconut milk in the can is the creamiest option. Full fat being creamier than lite. But you can use anything, as it all works.
    4. If you are adding alcohol, the end result will not be as hard since alcohol doesn't freeze as well. I add no more than 2 ounces of rum to make sure that it still freezes.

    Common Questions

    Can you freeze pina coladas with alcohol?

    Yes! You just need to watch the alcohol ratio. You want to keep it to about ¼ of an ounce of alcohol in each popsicle. So in this recipe, I use a 10 space mold and so 2 ounces of alcohol (if you use it)

    How long do they take to set?

    You want to freeze these for at least 4 hours. 6 or overnight leads to the best result.

    How long do they last in the freezer?

    Popsicles generally last about 6 months or so. However with homemade popsicles, you want to take them out of the mold and wrap each one individually for the longest shelf life.

    How do you store these?

    If you want them to last a while, it's best to take them out of the mold, wrap each one in plastic wrap, and then store in an airtight container or plastic freezer bag.

    Equipment

    • Blender
    • 10 space popsicle mold (or 10 small paper cups)

    Ingredients
     
     

    • 3 cups chopped pineapple
    • 2 cups coconut milk , the more fat it has the creamier it will be
    • 1 tablespoon fresh lime juice
    • ⅛ teaspoon almond extract , optional for added flavor
    • 2 ounces rum , optional for boozy twist (use any kind you prefer or a mix)
    • ½ cup shredded coconut , optional for topping

    Instructions
     

    • Place all ingredients into a blender and blend until smooth.
    • Pour into popsicles molds. I use a 10 space mold for these.
    • Freeze for at least 4-6 hours or overnight.
    • Once set, carefully remove each popsicle and enjoy!

    Notes

    • You can sub any fruit you love to switch it up if you want. 
    • Using a higher fat coconut milk will lead to a creamer result.
    • Nutrition facts use an average amount of fat coconut milk option and do not include the alcohol or coconut decor.
