Even my husband, who is picky as all heck, said that he "can do" this frosting! No butter needed to get a rich decadent flavor here. Stores easily and is the perfect topping for a healthier choice dessert!

    Vegan Chocolate Frosting

There are so many variations of vegan chocolate frosting out there! Some take the healthy route and use avocado or even sweet potatoes, and some are more decadent and use vegan butter.

I decided to go somewhere down the middle and use coconut cream (the solid white part of a can of full fat coconut milk) with a few options for add ins depending on whether you want a deeper richer flavor or a lighter sweeter flavor:

    1. For  deeper richer flavor use cacao and cane sugar (coconut sugar will work too but it will be less sweet).
    2. For a lighter more fudgy flavor use melted chocolate chips.

I also have a secret ingredient I use so that the coconut flavor is masked a bit. My husband is NOT a fan so when he told me this frosting was good, I knew I had nailed it.

That ingredient is lime juice. Yep. Lime juice. It helps cut the taste of the coconut and it gives the chocolate such a rich taste!

How do you store vegan chocolate frosting?

The best way to store this is in the fridge or freezer. If you store in the freezer it will last longer, however you need to allow it to defrost a bit before using.

You want to make sure to store it in an airtight container. If you are freezing it, then put a layer of plastic wrap directly onto the top of the frosting. This creates a seal and prevents freezer burn. The flavor will be kept much better too.

How long does vegan chocolate frosting last?

If you store it in the fridge, it will last for about a week. If you are storing it in the freezer, it will last a couple of months

How to Make Vegan Chocolate Frosting

This vegan frosting is so easy to put together! Both ways are super easy, but yield a different flavor. And since they both have very few easy to find ingredients, you don't have to worry about running around looking for all you need.

Option 1 (gives you a deeper richer more cocoa type flavor)

    1. Put everything into a bowl and mix.Hand mixer mixing chocolate frosting ingredients in a glass bowl
    2. Whip it up. Smooth chocolate frosting whipping up in a glass bowl
    3. Put in the freezer to thicken and use!

Option 2 (gives you a lighter sweeter more fudgy flavor)

    1. Melt the ingredients together and mix well. Hand mixing chocolate frosting ingredients in a glass bowl
    2. Put in the freezer to solidify. Solid smooth chocolate frosting in a glass jar
    3. Whip it. Hand mixer beating chocolate frosting in a glass bowl
    4. Put back in the freezer to thicken a bit and use!

See how thick and delicious it looks!

    Tips on customizing:

If you prefer to have this not very sweet make option 1 and use coconut sugar instead of cane sugar. You could also use maple syrup or date paste but the texture won't be as thick and sturdy.

If you like the coconut flavor you can leave the lime juice out!

This chocolate frosting can be used with so many recipes! I wouldn't judge you if you simply ate it with a spoon either!

    Instructions

    Option 1:

    • Mix everything with a hand mixer.
    • Store in the freezer to thicken a bit and use!

    Option 2:

    • Melt the chocolate chips and coconut cream in the microwave or in a double boiler on the stove.
    • Mix in the other ingredients.
    • Store in the freezer and let it get solid again, about 3-4 hours.
    • Use a hand mixer to whip it up.
    • Store in the freezer to thicken a bit and use!

    Notes

Put a can of full fat coconut milk in the fridge over night. Then scoop out the solid white part which is the coconut cream. Some stores also sell pure coconut cream.
You can also use coconut sugar to make this, the result will be slightly less sweet and deeper in flavor. Using malple syrup can work but the frosting will not be as thick.
Start with 1 teaspoon lime juice and add more until you get the flavor you like. Or leave it out if you like the coconut undertone
This makes 1 ½ cups of frosting. Serving size is 2 tablespoons.
