    The simplicity of feta pasta is amazing. It's only made with tomatoes, cheese, pasta, and herbs yet the flavors are to die for! Plus, it's so easy to make while feeling a little fancy.

    Ingredients

    This delicious vegan feta pasta recipe uses fresh and simple ingredients including:

    • Cherry tomatoes
    • Garlic
    • Olive oil
    • Feta cheese crumbles 
    • Pasta
    • Basil leaves
    • Crushed red pepper

    How to Make Vegan Feta Pasta

    Just as you may have seen in the viral videos, this pasta dish is so easy to make! Here's what you do:

    1. Add tomatoes, garlic, olive oil, and seasonings to a baking dish.Grape tomatoes spread out in a white baking dish

    This feta pasta recipe is amazing as is, but it's easy to add in extra veggies and protein. Try incorporating any of the following:

    • Mushrooms
    • Spinach
    • Artichoke Hearts
    • Roasted Bell Peppers
    • Zucchini
    • Chickpeas
    • Lentils
    • Pine nuts

    Tips and tricks

    Here are a few suggestions to help you out when making this vegan feta pasta:

    • Salt to taste, the feta you use may be salty enough. Remember, you can always add more but you can't take it away.
    • Use gluten-free pasta if needed.
    • You can cook the pasta while the tomatoes and cheese are baking, or prepare them in advance. Just make sure to strain them and reserve ¼ to ½ cup pasta water. If making ahead of time, store the pasta water and pasta separately.
    • Use a 9 x 12 baking dish. You won't need to prepare it as the oil that coats the tomatoes will be enough.
    • To make this oil free, use broth instead.
    • Keep leftovers in an airtight container in the refrigerator for up to 3-5 days.
    • Reheat in the microwave. You can also reheat by baking again, just make sure to cover it so the pasta doesn't dry out.

    Which pasta is vegan?

    Most pasta is made with inly flour and water, making it vegan. However make sure to read the ingredient list, occasionally egg is used.

    How do you bake pasta without getting soggy?

    To ensure the pasta doesn't get soggy when baking, make sure to slightly undercook. As pasta cooks in the oven it continues to bake as well as absorb some of the sauce.

    This recipe adds the pasta in after baking, so cook the pasta to your desired tenderness.

    What can I do with cashew cheese?

    Put it in everything! Depending on what type you make, add it to pasta or pizza. Or, serve with roasted veggies, salads, potatoes, even tacos!

    Should I cover baked ziti in the oven?

    Baked pasta dishes should be covered for the first portion of the cooking time to prevent moisture loss. Remove the cover for the last ⅓ of the time.

    What goes with baked ziti?

    Fresh veggies like asparagus, green beans, or broccoli are great to pair with baked ziti. Or serve alongside a crisp salad and garlic bread.

    Can you freeze vegan pasta bake?

    Yes you can. Place in a freezer safe airtight container and freeze for up to 3 months.

    Ingredients
     
     

    • 4 cups cherry tomatoes 22 Ounces
    • 2 cloves garlic , minced
    • ¼ teaspoon sea salt , optional (see note)
    • Drizzle of olive oil to bake , or broth if oil free
    • 1 cup feta cheese crumbles , homemade or store bought (see note)
    • 12 ounces uncooked pasta of choice , gluten-free if needed
    • ½ cup sliced basil leaves
    • 1 teaspoon crushed red pepper , optional for spice

    To serve:

    • Vegan Parmesan

    Instructions
     

    • Preheat oven to 400 F/ 205 C
    • Add tomatoes, garlic, salt (if using), olive oil and crushed red pepper (if using) to a 9 x 12 baking dish. Mix around to combine.
    • Add the feta to the center on top of the tomatoes.
    • Bake for 35-40 minutes, until tomatoes are bursting.
    • While baking, cook the pasta. Strain and reserve ¼ to ½ cup pasta water.
    • Once the tomatoes are done, add the pasta to the baking dish and toss well. Add the reserved pasta water ¼ cup at a time until you get the consistency you prefer.
    • Fold in the fresh basil.
    • Top with Parmesan and serve!

    Notes

    • You can also use a 4 ounce block of store bought feta. Depending on your feta, you may not need the extra salt. If you are sensitive leave it out and taste to see if you need more.
    • Nutrition facts may change depending on feta used.
