We love easy meals that are kid friendly. These English muffin pizzas are a weekly staple! You can use store bought sauce or make marinara at home, pick toppings you love and finish with your favorite cheese.

    Ingredients

Knowing how to make pizza with english muffins is a key life skill. And, having the sauce and all of the toppings prepped and stored in the best Rubbermaid containers is a life hack for the easiest meals ever!

For the base of the english muffin pizzas you need:

    • English muffins - gluten free if needed
    • Pizza sauce
    • Mozzarella cheese - dairy free if preferred

Then choose your toppings, we always make a variety:

    • Spinach
    • Mushrooms
    • Peppers
    • Olives
    • Pepperoni - plant based if preferred
    • Italian seasoning
    • Basil
    • Sausage - we like homemade vegan and gluten free sausage
    • Onions
    • Tomatoes or sun dried tomatoes
    • Artichoke hearts
    • Broccoli

Mini pizzas with english muffins come together so quick! Here's what to do:

    1. Split the muffins in half and spread on the sauce.
    2. Sprinkle some cheese on each pizza.
    3. Add the toppings.
    4. Cover with more cheese.
    5. Bake in the oven and dig in!

    What to Serve With Pizza

This english muffin pizza recipe can be served all by itself for lunch or an after school snack, but it's also fun to make for a full family dinner. Try pairing with any of these recipes:

    • Caesar Salad
    • Pesto Pasta Salad
    • Watermelon Feta Mint Salad
    • Vegan Greek Salad
    • Baked Eggplant Fries
    • Oven Baked Kale Chips
    • And Vegan Ranch for dipping!

    More Ways to Cook

If you don't want to heat up your oven you can also prepare the english muffin pizzas any of these ways:

    • Toaster oven: bake as directed, but keep a close eye as they might be done a little faster.
    • Air fryer: reduce the cook time to about 4 minutes.
    • Microwave: this method isn't recommended but in a pinch it will work. Heat for 1 minute, then in 30 second intervals until the cheese is melted.

    Meal Prep and Storage Tips

Prepping everything you need to make an english muffin pizza in the oven is ideal so it's easy to throw together in minutes!

    • Make the sauce and refrigerate until ready to use.
    • Prepare any toppings.
      • It is best to store them in separate Rubbermaid containers so they don't get soggy.
      • Keep in the fridge.
    • You can also freeze assembled english muffin pizzas!
      • Follow the instructions but wait to bake.
      • Arrange the pizzas in a single layer on a large plate or cookie sheet and freeze for 1-2 hours.
      • Once solid, transfer the pizzas to a Rubbermaid container.
      • Layer parchment paper between pizzas if you have more than one layer.
      • Freeze for up to 3 months.
      • Bake from frozen as directed, you may need to add a few minutes.
    • Leftovers can be kept in the refrigerator for up to 3-5 days.
    • Reheat in the oven or toaster oven to maintain the crispiness.

    The Best Food Storage Containers

When preparing recipes in advance as well as keeping leftovers as fresh as possible, you want to make sure you have the best quality airtight containers. This is why I love Rubbermaid with the EasyFindLids System™ the most!

    • My kitchen cabinets stay organized! The interchangeable lids snap together with the bases beautifully, and the containers nest.
    • A must have: the BPA-free containers are top-rack dishwasher-safe because no one likes hand washing containers and lids every day.
    • They're also freezer-safe for long term storage which means mini pizzas are a quick reheat away!
    • Speaking of reheating, they're also microwave-safe!
