    Anyone else love that cup of hot soothing goodness when the crisp weather hits? Here in SoCal, that's about 65 degrees. HAHA!!

    While I am all for treating yourself to the fall favorite pumpkin spice latte from your local Starbucks, making it at home can be just as delicious and not leave you feeling like you want to puke after. It's also the perfect dip for some pumpkin chocolate chip cookies. YUM

    Ingredients

    There are a few great options with ingredients for this one, depending on how healthy you want to go! Pure coconut cream is rich and adds some great creaminess here, it just needs some maple syrup to give it that sweet touch.

    • Dairy Free Milk
    • Coffee
    • Coconut Cream
    • Pumpkin Puree
    • Maple Syrup
    • Seasonings

    For the milk you use, the creamier ones work best for flavor so I like cashew, oat or coconut best. But any milk works. This is in addition to coconut cream which is the top layer of a chilled can of full fat coconut milk.

    Any type of coffee works here, but the better the quality the more delicious the end result will be. Just like they say don't cook with a wine you wouldn't drink, the same goes for coffee. Here are some great options:

    When it comes to sweeteners, I use maple syrup both because I love the rich flavor of fall it brings.

    If you want another quick way to make this creamy and sweet all at once, try the delish creamers by So Delicious Dairy Free ! I love the plain vanilla, but they have some yummy options.

    How To Make Vegan Pumpkin Spice Lattes

    It's easier than you think to get that cozy Fall flavor at home...without all the artificial stuff!

    1. Whisk all ingredients over medium low heat. Whisk mixing ingredients for a pumpkin spice latter in a pot

    Serving suggestions

    If you're not a coffee fanatic, or if your kids want in on the Fall fun (we all know they don't need any more energy!), you can omit the coffee. All you need to do is add more milk instead!

    Perfect your Pumpkin Spice Latte with these optional toppings:

    • Vegan Whipped Cream
    • Vegan Pumpkin Caramel Sauce

    Tips and Tricks

    • The higher in fat your dairy free milk, the creamier it will be.
    • If you need more kick than coffee, substitute it for 2-3 shots of espresso.
    • Prepare the whipped cream and caramel sauce beforehand to save time when you're ready to sip!
    • If somehow you end up with leftovers, or if you want to prepare ahead of time, you can store sealed in the refrigerator for up to 3 days. Just make sure to mix it well as the spices and puree may settle, potentially giving it a grainy texture.
    • To reheat, pour into a microwave safe mug and heat for 30 seconds to one minute until your desired temperature.

    Common Questions

    What is pumpkin spice?

    Believe it or not, pumpkin spice contains ZERO pumpkin! It's the seasoning blend that traditionally gives pumpkin pies their flavor, but in recent years has gained more versatility. The seasoning blend generally contains cinnamon, nutmeg, ginger, cloves, and allspice.

    Are pumpkin spice lattes vegan?

    More often than not, no. That's why I just had to create this recipe! I knew the creamy Fall deliciousness could be created without dairy, and I was right!

    What is coconut cream?

    Coconut cream is simply the top layer of cream in a can of cold full fat coconut milk.

    This vegan pumpkin spice latte is the best way to warm up your insides! Easy to make and healthier than the store bought version.

    Ingredients
     
     

    • 1 cup dairy free milk , I used cashew
    • 1 cup brewed coffee , see note
    • ¼ cup coconut cream , sub with vanilla dairy free creamer if preferred (I tried So Delicious Coconut Milk creamer)
    • ¼ cup maple syrup , don't use if your creamer is sweetened
    • ¼ cup pumpkin puree , not pumpkin pie filling
    • 1 ½ teaspoons pumpkin pie spice
    • Dash sea salt

    Optional (but highly recommended):

    • ½ teaspoon vanilla extract , or ¼ teaspoon vanilla bean powder
    • Dairy-free whipped cream , I use this homemade vegan version
    • Pumpkin Caramel Sauce

    Instructions
     

    • Place all main ingredients in a pot over medium low heat and whisk well (if using vanilla add that too). Allow to simmer, but don’t boil. Simmer about 5 minutes.
    • As another option, you can blend all ingredients on high until heated through.
    • Pour into heat safe cups.
    • Top with whipped cream and pumpkin caramel if preferred (but you should)!

    Notes

    • You can use any dairy-free milk you prefer. The higher in fat, the more creamy it will be.
    • You can sub the coffee with 2-3 shots strong espresso.
    • Coconut cream is the top cream layer of a can of cold full fat coconut milk.
    • I made this with both coconut cream and also subbed creamer and both were great.
    • To make this coffee free and more of a hot pumpkin drink, sub the coffee for more milk.
    • Nutrition facts are with the coconut cream and maple syrup version without toppings.
    Tips to prep ahead:
    • Make pumpkin caramel and/or whipped cream, if not buying it.
    Baby/toddler food idea:
    • Make the coffee free version.

      I am a coffeeaholic. And not for the caffeine, just because I love the taste, smell, warmth (NO iced coffees for me!), etc. HOWEVER, about 2.5 weeks ago, I gave it up cold turkey because I was drinking about a half a pot a day. In the morning, I would grab a cup. When I sat down to work, I would grab a cup. When I started cooking, I would grab a cup. When I felt stressed, I would grab a cup. You get the picture. It. Had. To. Stop. After 5 days of migraines, I felt great. No more bloat. 🙂 Soooo, long story short, I NEED this pumpkin spice un-latte in my life STAT! 🙂

      I died laughing at your comment today on IG on my pancakes....and well, guess what, I'm sitting here with drool dripping from my mouth and a straw to guzzle this down with some wishful thinking and uhhhh, NOPE, no drink has appeared yet, LOL!! This looks soooo good and I have my pumpkin spice ice cream coming this week too so we are both in the pumpkin spice frenzy this week! It has the espresso option so you could totally leave it out too. I know many people aren't coffee drinkers.
      I honestly think I would just drink the caramel straight!! Looks fantastic and I love those mugs!

      This looks amazing. I just drink coffee for drinking coffee reasons lol. It no longer helps in the caffeine department. I can easily switch to this.. haha Will look for this creamer

        Thanks Hedi! I actually purposely made this coffee free, I wanted something different that the normal latte and also I talk about how I am caffeine intolerant so don't get to participate in the yearly fall latte craze. So I created something for all of us non coffee people!

        Thank you! Since I have never been a coffee drinker, the idea of having to prep and drink it each morning stresses me out! LOL It's just one more thing to do, and I am not a morning "do things" person...other than working out bright and early! I can only imagine how much money those that get their daily Starbucks pay in coffee!! My kids loved this though, and no extra cash to Starbucks!
