We love to serve these vegan quesadillas with fresh Mexican salsa and my perfect easy guacamole for a well rounded meal everyone loves!

    Ingredients

This vegan quesadilla recipe is made with all plant based ingredients. Prep the fillings in advance so you can have a meal that comes together in minutes! You can even set up a 'fill your own quesadilla bar' so everyone can customize their own before cooking.

My homemade black beans are great to make in big batches so you can use them for easy dinners all week long, and are perfect for these veggie quesadillas!

    • Tortillas - flour tortillas are the classic choice for their softer texture. Make sure to find a gluten-free tortilla if needed. Corn tortillas can be tasty as well, but they are generally smaller in size and will give you a different flavor.
    • Shredded dairy free cheese - choose your favorite store bought kind. Cheddar cheese or monterey jack cheese would be good flavor options.
    • Fajita Veggies - these onions and bell peppers add extra flavor and nutrition, feel free to leave them our or swap them for other vegetables.
    • Black beans - a great source of plant-based protein and fiber, plus they taste great! Pinto beans are another option.
    • Jalapeño - add a little heat with slices of fresh or pickled jalapeños.

How to Make a Vegan Quesadilla

    1. Fill half of the tortilla with the cheese, beans, and veggies.
    2. Cook in a skillet until crispy and melty.
    3. Slice the quesadilla and serve!
